SUMMER RECIPES: 3 WAYS TO ENJOY AVOCADO THIS LABOR DAY

what's up everybody! I'm sure you've noticed that avocado has been a hot ticket item on menus everywhere for quite some time; from hipster cafes to fast food chains. it's obviously the main ingredient in guacamole..and I don't know about you but I'll kill a bowl of chips and guac without question. :)

and for a while now avocado has also been the star of the breakfast scene by way of avocado toast. there are so many recipes out there on what to put on it to make it savory, sweet, or both for whatever your heart and tastebuds desire. and as delicious as guac and avocado toast are, sometimes we crave something different.

the beauty of avocado is how versatile it is. you can eat it as a main course, a side, a condiment, dessert; the possibilities are endless. so here are three creative ways to get your avocado fix this labor day weekend without the toast or the guac!

gluten free crispy avocado 'fries'

-preheat oven to 375 degrees

-line baking pan with foil and coat with nonstick spray (I use olive oil spray from trader joe's)

-4 small ripe haas avocados, halved, pitted, peeled, and cut each half into threes

-prepare three bowls:

1. 1.5-2 cups coconut flour

2. 3-4 whisked eggs

3. 1.5-2 cups rice crumbs mixed with 1 tbsp each of salt, pepper, garlic powder, and chili powder

-coat in flour mix, then egg, then rice crumbs and lay on foil

-bake for 7-10 minutes on each side (depending on desired level of crispiness).

-remove pan from oven and let rest for a minute before serving.


protein packed avocado lime aioli

-1 small ripe haas avocado

-1 fresh squeezed lime

-1/2-3/4 cup plain greek yogurt (depending on if you want it thicker or creamier)

-1 clove garlic, minced

-1/2 tbsp of salt

-1 tsp of pepper

-1 tsp of onion powder

-place all ingredients into the blender and let 'er rip!

-serve immediately.


vegan avocado ice cream

-4 small ripe haas avocados

-juice from 1 small lemon (to prevent browning)

-1-13.5 oz can of full fat coconut milk

-5 tbsp of agave

-place all ingredients in blender and blend until it's a smooth and creamy.

-place in a pan and let freeze for 3-4 hours

-remove pan from freezer and let rest for a few minutes to soften

-scoop and enjoy!
